In the natural features of the Karst part of SLOVENIA, man has been using nature to his advantage for centuries. Juniper berries play an important role in Slovenian cuisine and folk medicine. Berries ripen for several years, are dark blue in color, tart, bitter and fatty. They are harvested only by hand. With several weeks of fermentation of crushed juniper berries and distillation, only a few locals with great effort obtain the highly valued juniper brandy and golden juniper oil.
